Cooking Instructions
Follow our step-by-step guide on how to make Colorful Vegetable Wild Rice Salad.
Step 1
Start by bringing 1 1/2 cups of water to a boil in a saucepan. Once boiling, add in the long grain and wild rice mix. Reduce the heat to medium-low, cover the pot, and let it simmer for about 20 to 22 minutes, or until the rice is tender and the liquid has been absorbed. Once done, transfer the rice to a bowl and allow it to cool completely.
Step 2
While the rice is cooling, bring another pot of water to a boil. Add the frozen peas and cook them for about 2 minutes, just until they're bright green and tender. Drain the peas and set them aside to cool.
Step 3
In a large mixing bowl, combine the cooled rice, cooked peas, drained marinated artichoke hearts, sliced black olives, diced roma tomatoes, finely chopped parsley, and sliced green onions. Gently mix everything together until well combined, allowing the flavors to meld beautifully.
Step 4
For the dressing, blend together some vinegar, canola oil, and a touch of sugar in a blender until the mixture is creamy and emulsified. Drizzle this delightful dressing over your salad and toss everything to coat evenly. This adds a zesty kick that ties all the ingredients together!
Step 5
Once mixed, cover the salad and refrigerate it until you're ready to serve. This salad is not only refreshing but also gets better as it sits, allowing the flavors to deepen.
