Cooking Instructions
Follow our step-by-step guide on how to make Creamy Chicken Enchilada Bake.
Step 1
Preheat your oven to 400°F (200°C). Lightly spray a 9x13-inch baking dish with cooking spray.
Step 2
In a large bowl, mix together the sour cream, cream of chicken soup, diced tomatoes, green chiles, salsa, and salt until well combined.
Step 3
Spread one-third of the mixture evenly across the bottom of the prepared baking dish.
Step 4
Layer 3 corn tortillas over the mixture. Cut a fourth tortilla in half and place the halves on the sides to cover the mixture completely.
Step 5
Sprinkle one-third of the shredded chicken, sliced olives, Monterey Jack cheese, and crumbled queso fresco on top of the tortillas.
Step 6
Repeat the layering process two more times, finishing with a layer of cheese on top.
Step 7
Bake in the preheated oven for about 45 minutes, or until the casserole is hot and bubbly. Let it cool slightly before serving.
