Using a sharp knife, slice each chicken breast horizontally into three thin pieces.

In a shallow dish, mix together the tapioca starch, all-purpose flour, and 1/4 teaspoon of salt. In another shallow dish, beat the eggs until well combined.

Heat the olive oil and 1 tablespoon of butter in a skillet over medium heat. Dip each piece of chicken first into the flour mixture, then into the beaten eggs, ensuring they are fully coated.
