Cooking Instructions
Follow our step-by-step guide on how to make Cilantro Creamy Dressing.
Step 1
Start by preheating your oven's broiler and adjusting the rack so it sits about 6 inches from the heat source.
Step 2
To make cleanup a breeze, line a baking sheet with aluminum foil.
Step 3
Next, take your halved Anaheim peppers and place them cut-side down on the sheet.
Step 4
Pop them under the broiler for about 5 to 8 minutes, keeping an eye on them until the skins are beautifully blackened and blistered.
Step 5
Once they’re done, transfer the peppers to a bowl and cover it tightly with plastic wrap.
Step 6
This steaming process will take about 20 minutes, making the skins easier to remove.
Step 7
After steaming, simply peel off the skins and discard them.
Step 8
Now, grab your blender or food processor and toss in the roasted peppers along with canola oil, pepitas, red wine vinegar, lime juice, cotija cheese, garlic, salt, and black pepper.
Step 9
Blend everything together for about 10 seconds until it’s well mixed, then gradually add in the cilantro and blend until you achieve a smooth, vibrant mixture.
Step 10
In a large bowl, whisk together mayonnaise and water until it’s silky and smooth.
Step 11
Finally, fold in the blended pepper mixture with the mayonnaise, stirring thoroughly until everything is beautifully combined.
Step 12
Enjoy this delicious creation as a dip, spread, or sauce that’s sure to impress!.
