Cooking Instructions
Follow our step-by-step guide on how to make Creamy Potato, Leek, and Spinach Soup.
Step 1
Start by placing your sliced leeks in a bowl and covering them with water.
Step 2
Let them soak for a few minutes to help remove any dirt and grit.
Step 3
Once they’ve soaked, drain the leeks and give them a gentle shake to get rid of any excess water.
Step 4
Next, grab a large pot and heat it over medium-high heat.
Step 5
Add the bacon and cook it until it’s crispy and golden, which should take about 5 to 7 minutes.
Step 6
Once it’s done, use a slotted spoon to transfer the bacon to a plate lined with paper towels to drain, leaving about 2 tablespoons of the delicious bacon drippings in the pot.
Step 7
Now, it’s time to add the drained leeks and sliced garlic to the pot with the reserved drippings.
Step 8
Sauté them together until the leeks become translucent, which will take another 5 to 7 minutes.
Step 9
After that, stir in the cubed potatoes and bay leaves, then pour in the chicken stock.
Step 10
Bring the mixture to a gentle simmer and let it cook until the potatoes are tender, about 10 to 15 minutes.
Step 11
Don’t forget to season with salt and pepper to taste! Once the potatoes are just right, carefully remove about half of the soup, including the potatoes, leeks, and garlic, and place it in a food processor.
Step 12
Add enough liquid from the pot to cover the mixture and blend until it’s smooth and creamy.
Step 13
Return this puréed goodness back to the pot.
Step 14
Now, stir in the reserved crispy bacon, chopped spinach, and half-and-half.
Step 15
Heat the soup gently until it’s hot, which should take just 1 to 2 minutes.
Step 16
If you’d like to adjust the consistency, feel free to add a bit more chicken broth or half-and-half until it’s just how you like it.
Step 17
Enjoy your comforting bowl of soup, perfect for warming up on a chilly day!.
