Start by patting the chickpeas dry with paper towels to get rid of any excess moisture—this helps your falafel achieve that perfect crispy texture.

Add in the vibrant chopped parsley, scallions, and cilantro, along with the warm notes of ground cumin, a sprinkle of kosher salt, and a dash of crushed red pepper flakes for a little kick.
