Step 1
In a large bowl, combine the chopped shrimp, minced jalapeno, taco seasoning, and olive oil. Mix well until the shrimp is evenly coated.
Step 2
Heat a large skillet over medium-high heat. Add the shrimp mixture and cook for about 4 minutes, stirring occasionally. Once cooked, turn off the heat and stir in the nacho cheese sauce. Allow the mixture to cool for 5 minutes.
Step 3
Preheat your air fryer to 400ยฐF (200ยฐC).
Step 4
Wrap the corn tortillas in a damp paper towel and microwave on high for about 20 seconds, or until warm.

To assemble the taquitos, spoon 1 tablespoon of refried beans and 1 tablespoon of the shrimp mixture into the center of each tortilla. Roll them up tightly.
Step 6
Working in batches, place the taquitos seam-side down in the air fryer basket. Lightly spray the tops with cooking spray.

Air fry the taquitos for 6 minutes, or until they are golden and crispy. Transfer them to a paper towel-lined plate to absorb any excess oil. Repeat with the remaining taquitos.
