Start by grabbing a large mixing bowl and combine your chopped cauliflower, chickpea flour, diced potatoes, water, chopped red onion, salt, minced garlic, curry powder, coriander, cayenne pepper, and cumin.

Give everything a good mix until all the ingredients are well blended.

Let the batter rest for about 10 minutes; this little pause helps the flavors meld beautifully.
