Step 1
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking for about 3 minutes until softened.
Step 2
Stir in the vegetarian ground beef crumbles, minced chipotle chilies, adobo sauce, ground cumin, and onion powder. Cook for an additional 5 minutes, stirring occasionally.
Step 3
Add the vegan cream cheese, nutritional yeast, and salt to the skillet. Cook until the cream cheese is melted and the mixture is well combined, about 2 minutes. Remove from heat.
Step 4
Preheat your air fryer to 400°F (200°C).

Take a corn tortilla and spoon a heaping tablespoon of the filling into the center. Roll the tortilla tightly around the filling and place it seam-side down in the air fryer basket. Repeat with the remaining tortillas and filling, working in batches as needed.
Step 6
Spray the tops of the taquitos lightly with cooking spray. Air fry for 6 minutes, or until golden and crispy. Transfer to a paper towel-lined plate to absorb excess oil. Repeat with the remaining taquitos.
