Cooking Instructions
Follow our step-by-step guide on how to make Crispy Arancini with Ham and Peas.
Step 1
Start by gathering all your ingredients and setting up a clean, organized workspace to make the cooking process smooth and enjoyable.
Step 2
Preheat your oven to a gentle 200°F (95°C); this will keep your delicious Arancini warm and ready to serve after frying.
Step 3
In a large saucepan, pour in a tablespoon of olive oil and heat it over medium heat.
Step 4
Add in the chopped onion and crushed garlic, stirring them together until the onion becomes soft and translucent, but be careful not to let it brown.
Step 5
Next, introduce the Arborio rice to the pan, stirring it for about two minutes until it’s lightly toasted and fragrant.
Step 6
Now, pour in a splash of dry white wine, stirring occasionally until the liquid has completely evaporated, leaving behind a rich flavor.
Step 7
Gradually add in boiling chicken stock, about a third of a cup at a time, stirring continuously and allowing the rice to absorb the liquid before adding more.
Step 8
Once all the stock has been absorbed and the rice is creamy, fold in the frozen peas and chopped ham, seasoning with salt and pepper to your taste.
Step 9
Remove the saucepan from the heat and stir in the grated Parmesan cheese, creating a luscious risotto.
Step 10
Transfer this mixture to a large bowl and let it cool slightly.
Step 11
In a small bowl, beat one egg and mix it into the risotto for added richness.
Step 12
In another bowl, whisk together the remaining egg with a splash of milk.
Step 13
Now it’s time to set up your breading station: place flour in one bowl, the egg and milk mixture in another, and dry bread crumbs in a third bowl.
Step 14
To shape your Arancini, take about two tablespoons of the risotto and roll it into a ball.
Step 15
Gently press a cube of mozzarella into the center, then roll it again to completely enclose the cheese.
Step 16
Lightly coat each ball in flour, dip it into the egg mixture, and then roll it in the bread crumbs until it’s fully covered.
Step 17
In a deep-fryer or a large deep saucepan, heat vegetable oil to 350°F (175°C).
Step 18
Fry the rice balls in batches, turning them occasionally until they are golden brown and crispy on all sides.
Step 19
Once they’re perfectly fried, drain the Arancini on a paper towel-lined plate to remove excess oil, and keep them warm in the preheated oven until you’re ready to serve.
Step 20
Enjoy the delightful crunch and gooey cheese inside these irresistible treats!.
