Step 1
Preheat your oven to 350ยฐF (175ยฐC) and lightly spray a large baking pan with olive oil cooking spray.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped tomatoes, minced onion, minced garlic, and minced jalapeno peppers. Stir in the chicken broth, taco sauce, flour, cumin, oregano, chili powder, and salt. Cook for about 5 to 10 minutes until heated through.
Step 3
Add the shredded rotisserie chicken to the skillet, mixing well until all ingredients are combined and heated through, about 2 to 3 minutes.

Wrap 8 corn tortillas in damp paper towels and microwave on high for about 30 seconds, or until soft and flexible. Repeat this process for the remaining tortillas in batches of 8.

Spoon approximately 2 tablespoons of the chicken mixture down the center of each tortilla and sprinkle with shredded Cheddar cheese. Roll the tortillas tightly around the filling and place them seam-side down in the prepared baking dish. Repeat this process until all taquitos are formed.
