Step 1
In a large bowl, combine the chopped onion, crushed garlic, Sriracha hot sauce, kosher salt, and 2 teaspoons of black pepper. Stir in the cold buttermilk until well mixed.

If desired, snip the wing tips off the chicken wings using kitchen shears. Add the wings to the buttermilk mixture, ensuring they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or up to 4 hours for maximum flavor.

Prepare the seasoned flour by whisking together flour, kosher salt, paprika, garlic powder, onion powder, lemon zest, black pepper, oregano, cayenne, baking powder, sage, and dry mustard in a separate bowl.

After marinating, drain the excess buttermilk from the wings and dredge them in the seasoned flour mixture. Place the coated wings on a wire rack to allow excess flour to fall off.

Let the wings sit for 10 to 15 minutes to help the coating adhere better during frying.
