Step 1
In a bowl, combine the chicken pieces with garlic salt, tossing to coat evenly. Allow the chicken to sit for 5 minutes to absorb the flavor.
Step 2
Prepare three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each piece of chicken first in the flour, then in the eggs, and finally coat with panko breadcrumbs.
Step 3
In a cast iron pan, heat about 2 inches of vegetable oil over medium heat. Carefully add the breaded chicken pieces in batches, frying until they are golden brown, about 5 to 6 minutes. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil. Repeat with the remaining chicken.
Step 4
For the dipping sauce, combine ketchup, soy sauce, sugar, and Worcestershire sauce in a saucepan over medium heat. Stir occasionally until the sugar dissolves, about 6 to 8 minutes.
