Step 1
In a large skillet, heat the toasted sesame oil over medium-high heat. Add the coleslaw mix and sauté for about 2 minutes until slightly softened.
Step 2
Stir in the chopped shiitake mushrooms, shrimp, green onions, and soy sauce. Cook for an additional 4 minutes until the shrimp is cooked through.
Step 3
Remove the skillet from heat and mix in the hoisin sauce. Allow the mixture to cool for about 5 minutes before folding in the chopped bean sprouts.
Step 4
On a clean work surface, place a spring roll wrapper with one point facing you, resembling a diamond shape. Spoon approximately 1 teaspoon of the shrimp mixture into the center of the wrapper.
Step 5
Fold the bottom point of the wrapper over the filling, then roll it up tightly. Fold in the sides and brush the top edge with water to seal the roll. Place the finished rolls seam-side down on a plate or baking sheet. Repeat this process with the remaining wrappers and filling.
Step 6
In a heavy-bottomed pot, heat 2 inches of peanut oil to 350°F (175°C).
Step 7
Carefully fry half of the spring rolls in the hot oil until they are lightly golden, about 3 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil. Repeat with the remaining spring rolls.
