Step 1
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the softened butter, brown sugar, and white sugar. Beat with an electric mixer on medium speed until the mixture is light and fluffy, about 5 minutes.

Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and optional pecan oil, beating until everything is well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients in three parts, stirring until just combined. Finally, fold in the finely chopped pecans.

Using a small cookie scoop, drop portions of dough onto the prepared baking sheet, spacing them about 3 inches apart as the cookies will spread during baking.

Bake in the preheated oven for 15 minutes. Then, increase the temperature to 375°F (190°C) and continue baking until the edges are golden brown, about 5 more minutes.
