Cooking Instructions
Follow our step-by-step guide on how to make Crunchy Seed Medley Salad.
Step 1
Start by preheating your oven to a cozy 375°F (190°C) and prepare a large baking sheet by lining it with parchment paper—this will make cleanup a breeze! In a spacious mixing bowl, gather your pepitas, sunflower seeds, flax seeds, egusi, chia seeds, quinoa, white sesame seeds, black sesame seeds, and amaranth seeds.
Step 2
Grab a rubber spatula and mix everything together until well combined; the colors and textures will be delightful! Next, drizzle a tablespoon of olive oil over your seed mixture and stir to coat.
Step 3
Then, add the remaining olive oil and continue mixing until every seed is glistening with oil.
Step 4
Now it’s time to season! Sprinkle in some fine sea salt, a dash of cayenne pepper for a little kick, and freshly ground peppercorns.
Step 5
Give it a thorough mix to ensure every bite is flavorful.
Step 6
Spread the seed mixture evenly across your prepared baking sheet, making sure it’s in a single layer for even roasting.
Step 7
Pop the baking sheet into your preheated oven and let it bake for 10 minutes.
Step 8
After that, take it out and give the mixture a good stir before returning it to the oven for another 5 minutes, stirring halfway through to ensure even roasting.
Step 9
Keep a close eye on those egusi seeds—they tend to brown first! After the second round, bake for an additional 5 minutes, checking after 3 minutes without opening the oven door.
Step 10
You’ll notice the pepitas puffing up and becoming glossy, which is a good sign! When the egusi seeds are golden brown and the pepitas are just starting to brown, turn off the oven and crack the door open.
Step 11
Let the seeds sit in the warm oven for 10 minutes to finish roasting to perfection.
Step 12
Once they’re done, carefully remove the baking sheet and allow the seeds to cool on the sheet, stirring occasionally to help them cool evenly.
Step 13
Once completely cooled, transfer your crunchy seed medley to an airtight container for storage.
Step 14
Enjoy this delicious and nutritious snack within three weeks, and savor the satisfying crunch with every bite!.
