Step 1
Place the chicken tenders between two sheets of heavy plastic on a solid surface. Use the smooth side of a meat mallet to firmly pound the chicken until it is flattened.
Step 2
Transfer the chicken to a resealable plastic bag and pour in enough mojo marinade to cover the chicken. Seal the bag and marinate in the refrigerator for 2 hours, or up to overnight for best flavor.
Step 3
In a large skillet, heat olive oil over medium heat. Remove the chicken tenders from the marinade, allowing excess to drain off, and place them in the skillet. Cook for 2 to 3 minutes on each side until lightly browned and an instant-read thermometer reads at least 165°F (74°C). Once cooked, transfer the chicken to a plate.
Step 4
In the same skillet, add the sliced onions, adding more oil if necessary. Cook the onions for about 3 minutes until they are softened, then remove from the skillet.
Step 5
Cut the Cuban bread into 4 rolls and slice each in half lengthwise without cutting all the way through. Spread yellow mustard on both the top and bottom of each roll.
Step 6
Assemble the sandwiches by layering dill pickle slices on the bottom half of each roll, followed by the cooked chicken, Swiss cheese, and sautéed onions. Close the sandwiches and cut each in half at an angle before serving.
