Step 1
In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sautรฉ until it turns lightly golden brown and fragrant, about 1 minute.

Carefully add the chopped tomatoes, tomato paste, salt, and pepper to the saucepan. Stir well to combine all the ingredients.

Let the sauce simmer, stirring occasionally, until it thickens, which should take about 20 minutes. Once thickened, remove from heat and stir in the fresh basil. Taste and adjust the seasoning with additional salt and pepper if needed. Set the sauce aside.

Season both sides of the cube steaks with salt and pepper.

Prepare three shallow dishes: in the first, combine flour and garlic salt; in the second, place beaten eggs seasoned with 1/2 teaspoon salt and 1/4 teaspoon pepper; and in the third, add bread crumbs.

Coat each cube steak lightly with the flour mixture, shaking off any excess. Dip the steak into the beaten eggs, allowing any excess to drip off, then coat it with the bread crumbs, pressing gently to ensure they adhere. Place the breaded steaks on a wire rack set over a baking sheet.

In a large skillet, heat oil over medium heat until shimmering. Carefully add the breaded cube steaks to the skillet and cook for 2 to 3 minutes on one side until golden brown. Flip the steaks and cook for an additional 2 to 3 minutes until the other side is also golden brown. Transfer the cooked steaks back to the baking sheet to drain excess oil.

Preheat your oven's broiler and position an oven rack about 8 to 10 inches from the heat source. Line a rimmed baking sheet with parchment paper.

Transfer the cube steaks to the lined baking sheet and top each with slices of mozzarella cheese. Broil in the oven until the cheese is melted and begins to brown, about 5 minutes.
