Step 1
In a mixing bowl, combine the grated cucumber, semolina flour, grated coconut, rice flour, chopped green chile, chopped ginger, and salt. Stir until well mixed.
Step 2
Gradually add water to the mixture, stirring until you achieve a smooth batter. Let the batter rest for 30 to 45 minutes to allow the flavors to meld.
Step 3
Heat a non-stick pan over medium heat and lightly brush it with oil.
Step 4
Pour a ladleful of the batter onto the pan and gently spread it out into a round shape. Note that the batter may not spread very thinly due to its texture.
Step 5
Cook the dosa for about 1 minute, or until the bottom is golden brown. Carefully flip it over and cook for an additional minute until the other side is golden brown as well.
Step 6
Repeat the process with the remaining batter, adding more oil to the pan as needed.
