Cooking Instructions
Follow our step-by-step guide on how to make Decadent Chocolate Crème Brûlée.
Step 1
Start by preheating your oven to 325°F (165°C). While the oven warms up, arrange six 6-ounce ramekins on a baking sheet, making it easy to transfer them later.
Step 2
In a medium saucepan, combine the heavy cream, 1/2 cup of white sugar, and vanilla extract. Place the saucepan over medium heat, stirring gently until the sugar dissolves and the mixture begins to simmer. Once it reaches that point, remove it from the heat.
Step 3
In a large mixing bowl, add the egg yolks. Gradually whisk in the hot cream mixture, starting with about two tablespoons at a time. This gradual process helps temper the yolks, preventing them from scrambling. After incorporating about a cup of the cream, you can pour in the rest and whisk until the mixture is smooth and well combined.
Step 4
Now, stir in the chocolate chips, allowing them to melt into the warm mixture. Let this sit for about five minutes, giving the chocolate time to fully incorporate and create a luscious texture.
Step 5
Once the chocolate is smooth and evenly distributed, carefully pour the mixture into the prepared ramekins, filling them almost to the top. Place the baking sheet with the ramekins in the preheated oven and bake for 15 to 20 minutes, or until the centers are just set but still slightly jiggly.
Step 6
After baking, remove the ramekins from the oven and let them cool for about 45 minutes at room temperature. Once cooled, transfer them to the refrigerator and chill for at least six hours, or overnight if you can wait!
Step 7
When you're ready to serve, position your oven rack in the topmost position and turn on the broiler. Sprinkle a thin, even layer of the additional white sugar over the tops of each chilled crème brûlée, ensuring they are coated but not too thick. Gently shake off any excess sugar.
Step 8
Place the ramekins on a baking sheet and slide them under the broiler. Keep a close eye on them as the sugar caramelizes; it should bubble and turn a beautiful light caramel brown. This process only takes a couple of minutes, so don’t walk away!
Step 9
Once caramelized, remove the ramekins from the oven and let them sit for a minute. Serve immediately for that delightful contrast of creamy chocolate and crunchy sugar.
