Step 1
Start by preheating your oven to 350ยฐF (175ยฐC). Grab an 11x17 inch baking pan and give it a good greasing and flouring to ensure your brownies come out easily.

In a large pot over medium heat, melt together the vegetable oil, 3/4 cup of margarine, and cocoa powder. Once melted, remove the pot from the heat and stir in 2 1/2 cups of sugar along with the salt. Let this delicious mixture cool slightly before moving on.

Now, it's time to add the eggs! Beat them in one at a time, making sure to mix well after each addition. Then, stir in the vanilla extract. Next, gently fold in 1 3/4 cups of flour until just combined. Spread this rich batter evenly into your prepared pan.

Bake in the preheated oven for about 20 minutes. Once done, allow the brownies to cool completely in the pan.

While the brownies are cooling, prepare the cookie dough layer. In a large bowl, beat together 1 cup of margarine, 1 cup of brown sugar, and 1 cup of white sugar until smooth and creamy. Add in the milk and 2 teaspoons of vanilla extract, mixing well. Gradually incorporate the 2 cups of flour until just combined.

Now comes the fun part! Take chunks of the cookie dough and place them over the cooled brownies. To create an even layer, place a piece of plastic wrap between your hand and the dough, then gently squish it down. This will help the cookie dough stick nicely to the brownies. Pop the pan in the fridge for about 30 minutes to firm up the cookie dough.

For the final touch, melt the chocolate chips with the shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until the chocolate is smooth and warm. Be careful not to overheat! Spread this luscious chocolate ganache over the chilled brownies and cookie dough layer. Refrigerate uncovered until set, which should take about 30 minutes. Once set, cut into squares and enjoy!
