Step 1
Start by combining the bittersweet chocolate chips and vegetable oil in a microwave-safe bowl. Stir them together until every chip is nicely coated with oil. Now, pop the bowl in the microwave and heat it for 1 minute at 60% power. Give it a good stir, then continue heating at full power in 15-second bursts, stirring after each interval until the chocolate is completely melted. This should take between 1 to 3 minutes, depending on your microwave's strength.
Step 2
While the chocolate is melting, prepare your workspace by arranging 24 paper bonbon or candy cups on a baking sheet. Once the chocolate is ready, pour about 2 teaspoons of the melted chocolate into each cup. Gently tilt the cups to ensure the insides are fully coated with chocolate. After coating, place the cups in the refrigerator to set. Don't forget to reserve any leftover melted chocolate for later!
Step 3
In a mixing bowl, pour in the heavy cream, vanilla extract, and coffee liqueur. Beat the mixture on high speed until it becomes frothy. Add in the 2 teaspoons of sugar and keep beating until soft peaks form. Now, stir in the hazelnut spread and mix on medium speed until everything is well combined. If your reserved chocolate has started to set, just microwave it for 10 seconds at 60% power to soften it again, then fold it into the mousse mixture.
Step 4
Next, fill a pastry bag with the luscious mousse filling and pipe it into each chocolate cup. If you don’t have a pastry bag, a resealable plastic bag with a corner snipped off works just as well! You might need to use a spoon to smooth out the tops for a neat finish. Once filled, chill the cups in the refrigerator for at least 4 hours to let the flavors meld and the mousse set.
Step 5
For the finishing touch, whip the remaining 1/2 cup of cream until it’s frothy, then add the teaspoon of sugar and whip until stiff peaks form. Use a pastry bag to add a delightful dollop of whipped cream on top of each chocolate cup. To make them even more special, sprinkle with chopped hazelnuts and place a coffee bean on top. Refrigerate until you’re ready to serve these irresistible treats!
