Step 1
Start by lining your baking sheets with aluminum foil. This will make it easy to remove the brittle once it's cooled and set. Now, grab a 3-quart saucepan and combine the white sugar, light corn syrup, and water. Place it over medium heat and stir until the sugar dissolves and the mixture begins to boil, which should take about 5 to 10 minutes. Once boiling, add in the butter and keep stirring frequently. You want to cook this until the mixture thickens and becomes syrupy. To check if it's ready, insert a candy thermometer into the center of the syrup (just make sure it’s not touching the bottom) and wait until it reads 230 degrees F (110 degrees C). This should take another 10 to 15 minutes.
Step 2
Next, it's time to mix in the star ingredients: the coarsely chopped almonds and dried cranberries. Stir them into the syrup mixture and continue cooking, stirring constantly, until the temperature reaches the soft-crack stage at 280 degrees F (138 degrees C). This will take another 10 to 15 minutes. Keep an eye on it, as you want to ensure it doesn’t burn!
Step 3
Now, we’re almost there! Continue stirring until the mixture reaches the hard-crack stage at 305 degrees F (152 degrees C). This final step will take another 10 to 15 minutes. Once it reaches this temperature, remove the saucepan from the heat.
Step 4
Quickly stir in the baking soda. This will create a lovely bubbly effect and lighten the mixture. Pour the brittle onto your prepared baking sheet, spreading it out evenly. If you want to get creative, you can stretch the candy by lifting and pulling from the edges using forks as it cools. Let it cool completely before breaking it into pieces.
