Cooking Instructions
Follow our step-by-step guide on how to make Delicious Apple Cider Muffins.
Step 1
Preheat your oven to 350°F (175°C) and line 8 muffin cups with paper liners.
Step 2
In a stand mixer, cream together the unsalted butter, butter-flavored shortening, and white sugar on medium-high speed until light and fluffy.
Step 3
Add the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl as needed.
Step 4
In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, salt, and ground nutmeg.
Step 5
With the mixer on low speed, alternate adding the flour mixture and apple cider to the butter mixture, starting with the flour and ending with the cider. Mix until just combined, then remove the bowl from the mixer.
Step 6
Gently fold in the diced apples using a wooden spoon until evenly distributed.
Step 7
Spoon the batter into the prepared muffin cups, filling each about 2 generous tablespoons full.
Step 8
Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool before serving.
