Step 1
Preheat your oven to 350ยฐF (175ยฐC). Lightly coat a 9x5-inch loaf pan with nonstick cooking spray.
Step 2
In a mixing bowl, combine the chopped apples, 2 tablespoons of white sugar, and 1 teaspoon of ground cinnamon. Toss until the apples are well coated.

In another bowl, mix the brown sugar with the remaining teaspoon of cinnamon. Set this aside.

In a separate bowl, whisk together the all-purpose flour and baking powder. Set aside for later use.

In a medium bowl, use an electric mixer to cream together the remaining 2/3 cup of white sugar and the softened butter until the mixture is smooth and creamy.

Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

Gradually add the flour mixture to the butter mixture, mixing until just combined. Pour in the milk and mix until the batter is smooth.

Pour half of the batter into the prepared loaf pan. Layer half of the apple mixture on top, gently pressing the apples into the batter. Sprinkle half of the brown sugar mixture over the apples.

Pour the remaining batter into the pan, followed by the rest of the apples and the remaining brown sugar mixture. Lightly press the apples into the top layer of batter.
