Cooking Instructions
Follow our step-by-step guide on how to make Delicious Banana-Nut Muffins.
Step 1
Preheat your oven to 350°F (175°C) and line 18 muffin cups with paper liners.
Step 2
In a large mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt until well combined.
Step 3
In a small bowl, mash 2 of the bananas with a fork, leaving some texture. Stir in 1/2 cup of the chopped pecans and set aside.
Step 4
In another large bowl, mash the remaining 2 bananas. Add the brown sugar and white sugar, then beat the mixture with an electric mixer for about 3 minutes until well combined.
Step 5
Add the melted butter, eggs, and vanilla extract to the banana-sugar mixture, mixing for an additional minute until smooth.
Step 6
Gently fold the banana-sugar mixture into the dry flour mixture until just combined. Then, fold in the banana-pecan mixture.
Step 7
Spoon approximately 1/4 cup of batter into each prepared muffin cup, and sprinkle the remaining pecans on top of each muffin.
Step 8
Bake in the preheated oven for 16 to 17 minutes, or until the tops spring back when lightly pressed. Be careful not to overbake!
Step 9
Allow the muffins to cool in the tins for 5 minutes before transferring them to a wire rack to cool completely.
