Step 1
Start by combining the warm milk, 1 tablespoon of sugar, and the yeast in a large bowl. Give it a gentle stir, then add in the egg yolks and whipping cream. Let this mixture rest for about 10 minutes, allowing the yeast to activate and work its magic.

In a separate mixing bowl, whisk together the all-purpose flour, 1/4 cup of sugar, and salt. Now, it's time to cut in the chilled butter. You can do this with a knife or a pastry blender until the mixture resembles coarse crumbs. If you prefer, a food processor works wonders too—just pulse the cold butter until it’s the size of small peas, then transfer the mixture to a bowl.
Step 3
Next, stir in the yeast mixture until everything is well combined. Cover the bowl with plastic wrap and pop it in the refrigerator for about 4 hours. This step is crucial for developing flavor and texture.
