Cooking Instructions
Follow our step-by-step guide on how to make Delicious Blueberry Almond Scones.
Step 1
Start by preheating your oven to a cozy 375°F (190°C). While that warms up, line two baking sheets with parchment paper to keep your scones from sticking.
Step 2
In a microwave-safe bowl, toss in 2 tablespoons of fresh blueberries. Heat them in the microwave for about 20 seconds until they’re nice and soft. Stir in the blueberry preserves and pomegranate juice, then set this fruity mixture aside to cool a bit.
Step 3
In a separate bowl, cream together 5 tablespoons of unsalted butter and 3/4 cup of white sugar using an electric hand mixer. Once it’s light and fluffy, beat in 1 egg until well combined. Then, add in 1/3 cup of milk, 1 teaspoon of almond extract, 2 teaspoons of lemon zest, and 1/2 teaspoon of lemon juice, along with your blueberry mixture. Keep mixing until everything is beautifully blended together.
Step 4
Now, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt in another bowl. Gradually fold this dry mixture into your wet ingredients, mixing gently until you form a soft dough. Finally, fold in 1/2 cup of chopped almonds and 1 cup of fresh blueberries, ensuring they’re evenly distributed throughout the dough.
Step 5
Using a rounded teaspoon, drop dollops of the dough onto your prepared baking sheets, giving them a little space to spread out as they bake. Pop them in the oven and bake for about 15 minutes, or until they turn a lovely golden brown. The aroma will be irresistible!
