Start by preheating your oven to 375°F (190°C). While it warms up, take a moment to grease a 9x13-inch baking dish with a little butter to ensure your crisp doesn’t stick.

In a large mixing bowl, combine 2 cups of whole wheat flour, 1 1/2 cups of rolled oats, and 1 cup of cold, cubed unsalted butter. Add in 1/2 cup of brown sugar, 1/2 cup of white sugar, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of kosher salt. Using an electric mixer on medium speed, beat the mixture until it resembles pea-sized crumbs, which should take about 3 to 5 minutes.
