Cooking Instructions
Follow our step-by-step guide on how to make Delicious Blueberry Streusel Coffee Cake.
Step 1
Start by preheating your oven to 350ยฐF (175ยฐC). Prepare a tube pan by coating it with 1 tablespoon of melted butter and dusting it with 1 tablespoon of flour to ensure your cake comes out easily after baking.
Step 2
In a mixing bowl, whisk together 2 3/4 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, 1 1/2 teaspoons of baking soda, and 1 teaspoon of salt. This will be your dry mixture.
Step 3
In a large bowl, beat 3/4 cup of unsalted butter and 1 cup of white sugar using an electric mixer until the mixture is light and fluffy. You want it to be noticeably lighter in color, which usually takes a few minutes. Add the eggs one at a time, making sure each egg is fully incorporated before adding the next. Finally, mix in 2 teaspoons of vanilla extract with the last egg.
Step 4
Now, alternate adding the dry flour mixture and 1 pint of sour cream to the butter mixture, mixing gently until just combined. Be careful not to overmix; you want a tender cake!
Step 5
In another bowl, combine 2 cups of fresh blueberries, 3/4 cup of brown sugar, 3/4 cup of chopped walnuts, and 1 teaspoon of ground cinnamon. This will create a deliciously sweet and nutty filling.
Step 6
Spread about one-third of the batter into the bottom of your prepared pan. Sprinkle one-third of the blueberry mixture over the batter. Then, layer half of the remaining batter over the blueberry mixture, followed by another third of the blueberry mixture. Repeat this process, finishing with the last of the batter and topping it with the remaining blueberry mixture.
Step 7
Bake in your preheated oven for 60 to 65 minutes, or until the cake is golden brown and springs back when lightly pressed. The aroma will fill your kitchen, making it hard to wait!
Step 8
Once baked, allow the cake to cool in the pan for a bit before transferring it to a wire rack to cool completely. Enjoy a slice with your morning coffee or as a delightful afternoon snack!
