Step 1
Start by preheating your oven to 400ยฐF (200ยฐC) and lining a baking sheet with parchment paper. To keep your wooden pop sticks from burning, soak them in water for a few minutes while you prepare the filling.
Step 2
In a saucepan, combine the chopped tart cherries, white sugar, cornstarch, water, and almond extract. Stir the mixture over medium heat, bringing it to a gentle boil. Keep stirring until it thickens, which should take about 2 minutes. Once thickened, remove it from the heat and let it cool down a bit.
Step 3
On a floured surface, roll out the prepared pie crusts until they form circles about 11 inches in diameter. Cut each crust into rectangles measuring approximately 1 1/2 inches by 2 inches. You should have enough to make 18 rectangles.
Step 4
Place 18 of these rectangles on your prepared baking sheet, leaving about an inch of space between each. Now, take a soaked wooden pop stick and place it on each rectangle, ensuring that about an inch of the stick is sticking out. Spoon about a teaspoon of the cherry filling into the center of each rectangle, then cover them with a second rectangle of dough. Crimp the edges with a fork to seal them well, and press the dough around the stick to secure it in place.
