Step 1
Start by stirring 1 tablespoon of sugar and the yeast into the warm water in a small bowl. Make sure the water is no hotter than 100°F (40°C). Let this mixture sit for about 5 minutes until the yeast softens and forms a creamy foam on top. This is the magic that will make your rolls rise!
Step 2
In another small bowl, whisk together the ground cinnamon and the remaining 2 tablespoons of sugar. Set this sweet mixture aside for later.
Step 3
In a large mixing bowl, beat together the eggs, applesauce, salt, and the last tablespoon of sugar until well combined. Then, stir in the yeast mixture, bringing all those flavors together. Gradually add half of the flour, mixing until there are no dry spots left. Now, add the remaining flour, half a cup at a time, mixing well after each addition until you have a sticky dough.
Step 4
Turn the dough out onto a lightly floured surface and knead it for about 8 minutes, until it’s fairly smooth but still a bit sticky. This is where the fun begins!
Step 5
Lightly oil a large bowl and place your dough inside, turning it to coat with the oil. Cover the bowl with a light cloth and let it rise in a warm spot (ideally between 80°F to 95°F or 27°C to 35°C) for about 30 minutes. While it rises, grease a 9x13 inch baking pan to prepare for the rolls.
Step 6
Once the dough has risen, gently deflate it and turn it out onto a floured surface. Roll the dough into a rectangle measuring 16x20 inches. Spread the honey evenly over the dough, then sprinkle the cinnamon sugar mixture and raisins on top. Starting from the long side, roll the dough tightly into a log shape and pinch the seam to seal it. Cut the log into 12 equal pieces and place them cut side up in the prepared pan. Cover the pan with a damp cloth and let the rolls rise until they double in size, which should take about 30 minutes.
