Cooking Instructions
Follow our step-by-step guide on how to make Delicious Coconut Easter Cake.
Step 1
Start by preheating your oven to a cozy 350°F (175°C). This is the perfect temperature for baking a cake that’s both fluffy and golden brown. Next, grab three 8-inch round cake pans and give them a good greasing and flouring to ensure your cakes slide out easily after baking.
Step 2
In a large mixing bowl, combine the yellow cake mix, 1 cup of water, vegetable oil, eggs, and 1 teaspoon of coconut extract. Stir everything together until it’s just moistened, then beat the mixture with an electric mixer on medium speed for about 2 minutes. You want it to be nice and smooth!
Step 3
Now, evenly pour the batter into your prepared cake pans. It’s time to bake! Place the pans in your preheated oven and let them bake until they’re lightly browned and a toothpick inserted into the center comes out clean—this should take about 25 minutes.
Step 4
Once baked, let the cakes cool in the pans for about 10 minutes. After that, carefully remove them from the pans and let them cool completely on wire racks for at least 30 minutes. Patience is key here!
Step 5
While the cakes are cooling, let’s whip up the frosting. In a large bowl, beat the room-temperature butter with an electric mixer on low speed until it’s creamy and smooth. Then, mix in 2 1/2 teaspoons of coconut extract for that delicious flavor.
Step 6
Gradually add in 1 cup of confectioners' sugar, mixing until it’s fully combined. Then, add 1 tablespoon of heavy cream. Continue this process, alternating between adding 1 cup of confectioners' sugar and 1 tablespoon of cream, until all the sugar and cream are incorporated and your frosting is smooth and creamy. It should be a dream to spread!
Step 7
Now, it’s time to assemble your cake. With a long serrated knife, level the tops of the cooled cakes. Place the first cake layer on a serving platter and spread about 1/4 of the frosting on top. Sprinkle with about 1/3 cup of flaked coconut for that lovely texture.
Step 8
Add the second cake layer on top and repeat the frosting and coconut sprinkle. Finally, place the third layer on top and frost the top and sides of the entire cake with the remaining frosting. Gently press 1/3 cup of coconut into the sides of the cake for a beautiful finish.
Step 9
For a fun touch, take 1 cup of the remaining coconut and place it in a resealable plastic bag. Add 1/2 teaspoon of water and the 2 drops of green food coloring. Seal the bag and shake it up until the coconut is tinted a lovely light green. Spread this green coconut over the top of the cake, creating a grassy look.
Step 10
To finish off your masterpiece, place the jelly beans in the center of the cake, pressing them lightly to secure. And there you have it—a stunning Coconut Easter Cake that’s sure to impress your guests!
