Step 1
Start by preheating your oven to 350ยฐF (175ยฐC). Prepare two 9-inch cake pans by greasing them and dusting with flour to ensure your cake comes out easily after baking.
Step 2
In a large mixing bowl, combine the all-purpose flour, white sugar, and salt. Stir these dry ingredients together until they are well mixed and set aside.

Next, melt 1 cup of butter in a small saucepan. In a separate bowl, dissolve 3 tablespoons of instant coffee granules in 1 cup of boiling water. Once the coffee is fully dissolved, pour this mixture into the melted butter. Bring it to a gentle boil over medium heat, stirring for about 10 seconds, then remove it from the heat and let it cool.
Step 4
In another bowl, whisk together the buttermilk, eggs, vanilla extract, and baking soda until the baking soda is fully dissolved. Now, mix the cooled coffee-butter mixture into the bowl with the flour mixture, stirring gently to combine. Finally, fold in the buttermilk mixture until everything is just combined. Be careful not to overmix!
Step 5
Pour the batter evenly into the prepared cake pans. Bake in your preheated oven for about 20 minutes, or until the cakes are golden brown and a toothpick inserted into the center comes out clean. Once baked, allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

While the cakes are cooling, prepare the frosting. In a mixing bowl, beat together 3/4 cup of softened butter, 3 cups of confectioners' sugar, 1 tablespoon of instant coffee, and 2 tablespoons of heavy cream using an electric mixer on high speed. Mix until the frosting is light and creamy. If the frosting is too thick, add more cream, one teaspoon at a time, until you reach a spreadable consistency.
Step 7
