Step 1
Start by preheating your oven to 350°F (175°C). Spread the slivered almonds evenly on a baking sheet, and toast them in the oven for about 8 to 10 minutes, or until they are lightly browned and fragrant. Once toasted, let them cool completely.

Next, reduce the oven temperature to 300°F (150°C) and lightly grease another baking sheet to prepare for the biscotti.

In a mixing bowl, lightly beat the eggs along with the vanilla and almond extracts. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Gradually combine the egg mixture with the dry ingredients using an electric mixer until a dough forms. Gently fold in the cooled toasted almonds until just incorporated.
Step 4
On a lightly floured surface, turn out the dough and shape it into a log measuring about 3 inches wide and 14 inches long. Carefully transfer this log to your prepared baking sheet.
