Step 1
In a mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate small bowl, whisk together the milk, egg, and vanilla extract. Pour this mixture into the flour mixture and knead gently until just combined. If the dough is too wet, add a little more flour; if too dry, add a bit more milk.

Divide the dough into thirds. Set aside one third for the topping and roll out the remaining two thirds on a lightly floured surface into an 11x15-inch rectangle. Place this dough into the bottom of a 9x13-inch baking pan, ensuring it comes at least halfway up the sides.

In a small saucepan, combine the pineapple and sugar. Bring to a boil over medium heat for about 5 minutes. In the meantime, pour the reserved pineapple juice into a bowl and mix in the cornstarch until dissolved. Add this mixture to the saucepan and stir until thickened, which should take about 5 more minutes. Remove from heat and let the filling cool in the refrigerator for about 15 minutes.
