Step 1
Start by preheating your oven to 350Β°F (175Β°C). Grab a 9-inch fluted tube cake pan and give it a good greasing to ensure your cake comes out easily later on. In a small bowl, mix together 1/4 teaspoon of ground cinnamon with 2 teaspoons of white sugar. Pour this delightful mixture into your greased cake pan, tilting it gently to coat the inside with the cinnamon sugar. Tap out any excess sugar and set the pan aside.
Step 2
Next, letβs sour the milk! Combine 1 tablespoon of lemon juice with 1 cup of milk in a large measuring cup and let it sit for about 5 minutes. This will give your cake a lovely tang. Meanwhile, in a large mixing bowl, cream together 1/2 cup of shortening and 1 1/2 cups of white sugar until smooth and fluffy. Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
Step 3
In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add this dry mixture to your creamed mixture, alternating with the soured milk, until you have a smooth batter. Now, fold in the 2 cups of chopped fresh rhubarb, which will add a wonderful tartness to your cake.
Step 4
Pour half of the batter into the prepared cake pan. In a small bowl, mix together 1/3 cup of brown sugar, 1/3 cup of white sugar, 1 teaspoon of ground cinnamon, and 1 cup of chopped walnuts. Sprinkle this nutty mixture over the batter in the pan, then pour the remaining batter on top, covering the nut layer.
Step 5
Bake your cake in the preheated oven for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean. Once baked, let it cool in the pan for about 10 minutes before transferring it to a serving platter.
