Start by pouring the warm water, olive oil, and two eggs into the pan of your bread machine. This combination will create a moist and flavorful base for your challah. Next, sprinkle in the salt and sugar, followed by the white spelt flour and whole grain spelt flour. Add the xanthan gum and the dry yeast on top, ensuring everything is well distributed. Now, place the pan into the bread machine and select the dough cycle. Keep an eye on the dough as it mixes; if it seems to be sticking to the sides, gently use a rubber scraper to help it along. Once the dough cycle is complete, remove the dough from the pan and divide it into three equal pieces. Roll each piece into a long rope, about 18 inches in length. Braid the three ropes together, sealing the ends by tucking them under the loaf. Place your beautifully braided challah onto a greased baking sheet, cover it with a soft cloth, and let it rise until it doubles in size, which should take about an hour.
