Start by sifting together the flour, baking powder, and salt onto a clean sheet of waxed paper. This step ensures a light and airy dough, so don’t skip it!

In a mixing bowl, combine the white sugar, unsalted butter, and softened cream cheese. Use an electric mixer to beat them together until the mixture is creamy and smooth. Then, add in the egg yolk and vanilla extract, mixing until well incorporated.

Gently stir the flour mixture into the creamy butter mixture until just combined. Be careful not to overmix! Once combined, divide the dough into three equal portions. Shape each portion into a disk, wrap them in plastic wrap, and refrigerate for at least four hours, or even better, overnight. This chilling time is crucial for developing flavor and texture.
