Cooking Instructions
Follow our step-by-step guide on how to make Delightful Lavender Lemon Bars.
Step 1
Start by preheating your oven to 350°F (175°C). Grab an 8x12 inch baking dish and give it a light greasing to ensure your bars come out easily later on.
Step 2
Next, let’s make some lavender sugar! In a blender, combine the white sugar with 2 teaspoons of dried lavender buds. Blend until the lavender is finely powdered, releasing its lovely aroma.
Step 3
In a mixing bowl, combine 1/4 cup of your freshly made lavender sugar, softened butter, softened coconut oil, 2 cups of all-purpose flour, and a dash of salt. Use an electric mixer to blend everything together until a smooth dough forms. Once ready, press this dough evenly into the bottom of your prepared baking dish.
Step 4
Pop the dish into the preheated oven and bake for about 15 minutes, or until the top starts to turn a lovely golden brown. This will create a delicious base for your lemon filling!
Step 5
While the crust is baking, let’s prepare the lemon filling. In a separate bowl, mix together the remaining lavender sugar, 1/4 cup of flour, beaten eggs, lemon juice, and if you like, the lemon extract for an extra zing. Don’t forget to add the 1/2 teaspoon of dried lavender buds for that floral touch!
Step 6
Once the crust is done baking, carefully pour the lemon mixture over the hot crust. Return the dish to the oven and bake for an additional 20 minutes, or until the center is set and no longer jiggles.
Step 7
After baking, allow the bars to cool completely in the dish. Once cooled, dust the top with confectioners' sugar for a sweet finishing touch. Cut into squares and serve these delightful treats to your friends and family!
