Cooking Instructions
Follow our step-by-step guide on how to make Spicy Dragon Eggs.
Step 1
Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then remove the saucepan from heat and let the eggs sit in the hot water for 15 minutes.
Step 2
After 15 minutes, drain the hot water and fill the saucepan with cold water. Allow the eggs to cool for 15 to 20 minutes.
Step 3
Once cooled, drain the water and gently tap or roll the eggs on the counter to crack the shells while keeping them intact.
Step 4
Return the cracked eggs to the saucepan and add enough water to cover them. Pour in the soy sauce, molasses, salt, and add the tea bags. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, allowing the eggs to absorb the color and flavor.
Step 5
Remove the saucepan from heat and let the eggs cool in the liquid until they reach room temperature.
Step 6
Peel the eggs and trim the bottom of each egg so they can stand upright. Cut each egg in half lengthwise and scoop the yolks into a bowl.
Step 7
In the bowl with the yolks, mix in mayonnaise, diced red bell pepper, salt, and pepper until well combined.
Step 8
Spoon the yolk mixture back into the egg whites, smoothing the filling to be level with the egg white. Reassemble each egg half.
Step 9
Pour salsa onto a serving plate and arrange the eggs upright in the salsa for a beautiful presentation.
