Cooking Instructions
Follow our step-by-step guide on how to make Swiss Enchiladas.
Step 1
Preheat your oven to 350ยฐF (175ยฐC).
Step 2
Line a griddle or large frying pan with aluminum foil and heat over medium-high heat.
Step 3
Add the tomatillos, onion, serrano chiles, and garlic to the pan. Grill until charred, about 7 to 10 minutes, turning occasionally for even cooking. Allow the grilled vegetables to cool slightly.
Step 4
Transfer the grilled vegetables to a blender. Add the water, heavy cream, and 1/2 cup of Chihuahua cheese. Blend until smooth. Season the sauce with chicken bouillon granules, adding more water if needed to achieve your desired consistency.
Step 5
In a frying pan, heat a small drizzle of oil over medium-high heat. Fry the tortillas one by one for a few seconds until they are soft but not crispy. Place the cooked tortillas on a baking sheet lined with paper towels to absorb excess oil.
Step 6
Pour one-third of the sauce into a 9x13-inch glass baking dish. Fill each tortilla with shredded chicken, roll them up, and arrange them in a single layer over the sauce. Pour the remaining sauce on top and sprinkle with the remaining 1 cup of mild Cheddar cheese.
Step 7
Bake in the preheated oven for about 25 minutes, or until the cheese is melted and bubbly.
