Step 1
Start by preheating your oven to a cozy 200°F (95°C). While it warms up, line a baking sheet with parchment paper to ensure your Santa hats don’t stick.
Step 2
In a mixing bowl, beat the egg whites until they form soft peaks. This is where the magic begins! Next, add in the cream of tartar and vanilla extract, continuing to beat until well combined.
Step 3
Gradually sprinkle in the white sugar, beating until the mixture transforms into a glossy meringue with stiff peaks. It should look like fluffy clouds!
Step 4
Now, take about a quarter of the meringue and transfer it to a separate bowl. In the remaining meringue, add a drop of red food coloring and mix until you achieve your desired shade of festive red.
Step 5
Grab a piping bag fitted with a round tip and fill it with the red meringue. Pipe out 20 little Santa hat-shaped triangles, each about 1.5 inches tall, bending the tips over for that classic hat look. Sprinkle the red sugar on top to add some sparkle!

With the remaining uncolored meringue, fill another piping bag and pipe little white pom-poms on the tips of each hat, along with a fluffy white trim at the bottom of each hat.
