Cooking Instructions
Follow our step-by-step guide on how to make Corn Tortilla Fiesta Pizzas.
Step 1
In a microwave-safe bowl, heat the refried beans on high for about 2 minutes, stirring halfway through until warmed through.
Step 2
Spray both sides of each corn tortilla with cooking spray and place them on a wire rack.
Step 3
Heat a non-stick skillet over medium-high heat. Fry one side of each tortilla until lightly browned, about 3 minutes. Return the tortillas to the wire rack with the browned side facing up.
Step 4
Spread a thin layer of refried beans on each tortilla, leaving about 1/2 inch from the edge.
Step 5
Sprinkle the shredded Mexican cheese blend evenly over the refried beans.
Step 6
Carefully transfer one tortilla pizza back to the skillet, bean side up, and lightly fry until the cheese begins to melt, about 1 minute. Return the pizza to the wire rack and repeat with the remaining tortillas.
Step 7
Top each melted cheese pizza with diced tomatoes, sliced green onions, chopped cilantro, and black olives.
Step 8
Slice the pizzas into wedges and serve immediately.
