Step 1
Start by warming your water to about 110°F (45°C) – it should feel comfortably warm to the touch. In a large mixing bowl, combine the warm water with the sugar, stirring gently to dissolve. Now, sprinkle the active dry yeast over the surface of the water and let it sit for about 5 minutes until it becomes foamy and bubbly. This is a sign that your yeast is alive and ready to work its magic!
Step 2
Next, stir in the salt along with the coarse whole wheat and rye flours. Mix well until everything is combined. Gradually add the bread flour, one cup at a time, mixing until the dough is no longer sticky. Once you have a cohesive dough, turn it out onto a floured surface and knead it for about 10 minutes until it’s smooth and elastic. This step is crucial for developing the gluten, which gives the bread its structure.
Step 3
After kneading, place the dough in a lightly oiled bowl, turning it to coat all sides. Cover the bowl with a clean kitchen towel and set it aside in a warm place to rise until it has doubled in size, which should take about an hour. This is the perfect time to relax and maybe enjoy a cup of tea!
