Cooking Instructions
Follow our step-by-step guide on how to make Finnish Turnip and Carrot Casserole.
Step 1
Start by preheating your oven to a cozy 350°F (175°C). Grab a 2-quart casserole dish and give it a light greasing to prevent sticking. This will help your casserole come out beautifully.
Step 2
In a large pot, toss in the cubed carrots and turnip, then cover them with salted water. Bring this vibrant mix to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and let it simmer until the veggies are tender, which should take about 20 minutes. Afterward, drain the pot and let the vegetables steam dry for a minute or two.
Step 3
Return the tender carrots and turnips to the pot. Now, it’s time to mash them up! Add in the softened butter, salt, flour, and 1/4 cup of sugar. Mash everything together until it’s a smooth and creamy consistency. In a separate bowl, whisk together the eggs and milk, then fold this mixture into your mashed veggies until everything is well blended. Scrape this delightful mixture into your prepared casserole dish.
Step 4
For a sweet touch, mix the remaining 2 tablespoons of sugar with the ground cinnamon in a small bowl. Sprinkle this mixture generously over the top of your carrot and turnip mash, adding a lovely flavor and a hint of sweetness.
Step 5
Now, pop your casserole into the preheated oven and bake for about 45 minutes. You’ll know it’s ready when the top has turned a lovely golden brown and the mash has slightly firmed up. The aroma will fill your kitchen, making it hard to resist!
