Step 1
Start by placing the chopped apples into a saucepan along with the white sugar and ground cinnamon. Heat the mixture over low heat, stirring frequently, until the apples soften, which should take about 10 minutes. Once theyβre tender, mash them with a fork to create a chunky applesauce. Set this delicious apple filling aside to cool a bit.
Step 2
In a mixing bowl, whisk together the all-purpose flour and salt. Next, cut in the vegetable shortening using a pastry cutter until the mixture resembles coarse crumbs. Gradually stir in the water until the dough is moistened. Knead the dough gently just until it holds together, then transfer it to a floured surface. Pat it into a round shape and roll it out to about 1/8-inch thickness. Use a large round cookie cutter, about 4 inches in diameter, to cut out 8 rounds of dough.
Step 3
Now itβs time to assemble the pies! Place a heaping tablespoon of the apple filling in the center of each dough round. Moisten the edges of the dough with a little cold water using your finger.
