Step 1
Bring a large pot of lightly salted water to a boil. Add the tri-color rotini pasta and cook until tender yet firm to the bite, about 8 minutes. Drain the pasta and set it aside to cool.

In a large mixing bowl, combine the diced apples, chopped figs, diced red onion, chopped basil, sliced black olives, chopped mint, and minced garlic.

In a separate bowl, whisk together the mayonnaise, Pecorino Romano cheese, sour cream, sugar, vinegar, lime zest and juice, salt, and pepper until smooth.
