Step 1
Preheat your oven to 325ยฐF (165ยฐC) and prepare 36 muffin cups by greasing and flouring them.

In a large bowl, mix together the molasses, brewed coffee, and beaten eggs until smooth.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground allspice, ground nutmeg, and salt.

In another bowl, use an electric mixer to cream the shortening and white sugar until light and fluffy. Gradually add the coffee mixture and the flour mixture alternately, mixing well after each addition. Stir in the vanilla extract, then gently fold in the chocolate chips and miniature marshmallows.
