Step 1
Preheat your oven to 200°F (95°C).
Step 2
In a bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until the yeast softens and forms a creamy foam.

In a separate mixing bowl, combine the rice flour, oat flour, tapioca starch, cornstarch, xanthan gum, and salt. Mix well.

Add the yeast mixture, eggs, and canola oil to the dry ingredients. Mix with an electric mixer on high speed for 3 minutes until well combined.

Evenly distribute the batter into eighteen 5-inch pie tins, placing them on two large cookie sheets. If desired, sprinkle sesame seeds on top of the buns.

Allow the buns to rise in the warm oven for 30 to 40 minutes.

Without removing the buns, increase the oven temperature to 400°F (200°C).
Step 8
Bake the buns for 15 minutes, then switch the baking sheets on the oven racks. Continue baking for an additional 12 to 15 minutes, or until they are golden brown.
